Kathy's Lemon or Lime Wedding Cookies


1 cup Midtown Olive Oil Eureka Lemon EVOO or Organic Persian Lime EVOO
3/4 cup powdered sugar
1 to 2 Tablespoons Water
Juice and zest of one lemon/lime
3 cups flour
1/4 teaspoon salt
An additional 1 1/2 cup powdered sugar to roll cookies in
Tru Lemon/Tru Lime powdered juice, 8 packets


Add Lemon/Lime EVOO, water, powdered sugar, Lemon/Lime juice and zest, flour and salt to a large mixing bowl. Mix until it makes a dough.
Take a small amount of dough and roll it into a one inch ball. Continue and place the balls on a lightly greased cookie sheet, about 2 inches apart.
Bake in a 350 degree oven for about 15 minutes. Allow to cool. Mix additional powdered sugar and Tru Lemon/Tru Lime. Put in a large Ziploc bag. Add cookies and coat with powdered sugar mixture
