3lbs baby or petite potatoes (any color or a variety of colors)
2 ½ Tbsp Midtown Olive Oil Tuscan Herb Olive Oil
1 Tbsp s.a.l.t. Sisters Tuscan Farmhouse Herb Seasoning
¼ tsp s.a.l.t. Sisters Fine Pink Himalayan Salt
Preheat oven to 350°. Wash potatoes in colander and drain. If potatoes are larger than 1" in diameter, then cut into 1" pieces being sure to leave skins on.
Heat a cast iron pan or skillet in preheated oven for 5 minutes. While pan is heating, place potatoes in large mixing bowl and add herbs, salt and oil. Mix together while making certain to coat all of the potatoes.
Carefully remove heated pan or skillet from oven and add potato mixture to hot pan. Return pan to oven and cook at 350° for 40 - 50 minutes or until potatoes are crispy on the side that's on the pan. I usually stir mine about 20 minutes into cooking to ensure they crisp on both sides and that everything is well-coated with oil and seasoning.
