Suyo Cucumber Balsamic Mojito


6 mint leaves, plus a sprig for garnish

1 1/2 Tbsp simple syrup (see recipe below)

1 Tbsp fresh lime juice (save excess lime and cut into wedges)

1 Tbsp MTOO Suyo Cucumber White Balsamic Vinegar

2 oz light Rum (or Vodka)

Club soda

Place first 4 ingredients in a wide glass. With a wooden spoon, muddle together to form a good syrup, add ice cubes, then pour Rum and club soda, mix. Garnish with mint leaves + cucumber.

Simple Syrup: 1 cup water + 1 cup granulated sugar. Bring the water to a low boil in a small saucepan. Add sugar and stir until it completely dissolves. Remove from heat and cool. Store what is not needed in Mason jar with lid or similar in refrigerator up to one month.
