Watermelon Greek Salad
3 cups kale, chopped fine
2 cups watermelon, seeded and diced
2 cups cucumber, peeled, seeded and diced
1/2 cup diced red onion
1/2 cup Kalamata olives, cut in half
1/4 cup Midtown Olive Oil Ultra Premium EVOO (Arbequina, Picual, Arbosana, CA Cuvee etc.)
3 Tbsp Midtown Olive Oil Traditional Balsamic Vinegar
1 tsp minced garlic
1 Tbsp chopped fresh mint
Pepper, freshly ground & sea salt, to taste
1/2 cup crumbled feta cheese
Place kale, watermelon, cucumber onions and olives in a large bowl. Whisk olive oil, balsamic vinegar, garlic, mint, salt & pepper in a small bowl. Pour dressing over the sald; toss thoroughly. Top with feta cheese. 6-8 servings
