Using centuries-old traditions, our Dark Balsamics are aged to perfection and have unparalleled richness and complexity. They are methodically crafted in Modena, Italy using white Trebbiano grapes, which are slowly cooked in a copper kettle over an open wood fire. As a result, the grape juice, or must, undergoes caramelization. Then, they are stored in aged wooden barrels for up to 18 years, where a slow acetification process through natural fermentation occurs. The result is a pure, all-natural dark balsamic vinegar free of added sugars or thickening agents. These culinary gems are great for vinaigrettes, glazes, bread dipping, and more!
