Midtown Olive Oil Latke Waffles

Ingredients:

2 pounds baking potatoes, washed and scrubbed clean

1 large onion, grated

2 tsp. baking powder

1 1/2 tsp. sea salt

Freshly ground pepper

2 Tbsp. Midtown Olive Oil (any flavor or Ultra Premium Varietal)

1/2 cup + 2 Tbsp. all-purpose flour

4 eggs

Olive Oil for greasing waffle iron

Directions:

Heat oven to 350°. Lightly oil baking sheet and set aside.

Coarsely grate the potates by hand or with afood processor, transferring to a large bowl of cold water as grated.  Soak potatoes for 1 to 2 minutes after last batch is added to water.  Then, drain well in a colander.  Spread grated potatoes and onions on a kitchen towel and roll up jelly roll fashion.  Twist towel tightly to wring out as much liquid as possible.  Transfer the potato mixture to a bowl and stir in eggs, oil, salt, pepper, baking powder and flour.  Heat the waffle iron to high heat, then coat with oil.  Heap some latke mixture onto the waffle iron and spread into an even layer.  Cook until deep golden brown.  Then, transfer to a baking sheet and place in the oven to keep warm.

Makes about 8 latke waffles.
